Quick meals and Wines to match

It’s great having a wine match for elaborate and slow cooked meals; drinking wine is always a bit of an occasion.
One issue for me however, is that I don’t always have time available to put together anything too complicated, or to wait for anything that cooks slowly. You also need a fair bit of time aside to clean up after yourself (or at least I do!) after a truly epic effort in the Kitchen.
One favourite quick dinner of mine (thanks to my sister) is to fry Onions, Garlic, Mushrooms, some bacon bits and to finally stir in a pot of Crème fraiche, add in some boiled pasta and dinner is served. With the creamy sauce and slightly sweet acidic touch you get from the onions I really like a youngish, lightly oaked Chardonnay with this speedy dinner. If I’m in a real hurry I’ll go for a grilled fish finger sandwich, with lightly toasted bread and mayonnaise or ketchup depending on my mood! (A guilty pleasure since Uni.) If I have the choice I’ll generally go for a nice un-oaked Sauvignon (generally from NZ) with this ‘delicacy’.
Does anybody else have any favourite meals on the run and wines to match? I clearly need to broaden my range and possibly (reading this back) eat more healthily

As a really quick light summer snack my favourite at the moment can be made from a packet of prepared green salad leaves or lettuce, a small tub of king prawn cocktail.

Just roughly chop the salad/lettuce, add a dollop or two of the king prawn cocktail mix together roughly with a knife and fork add a touch of black pepper and sea salt, a squeeze of lemon juice - a slice of buttered fresh bread and a glass of your favourite (Marlborough preferably) S Blanc or unoaked Chardonnay.

A scrummy snack which takes 60 seconds to prepare. Sit outside in the sunshine (if you can find it) and - scrummy.

Flash fry a seasoned tuna steak for a minute until seared on the outside, but still raw in the middle, and serve with rocket tossed in vinaigrette and sprinkled with sesame seeds. I like to add some pickled sushi ginger too. I think Pinot Noir is a great accompaniment .
